Prosecco Rosé only became a legal category in 2020, and it works well — Glera with a small proportion of Pinot Noir for colour and red fruit. Wild strawberry and white peach over citrus, with the same soft tank-method mousse as white Prosecco but a little more berry weight behind it. The DOC requires a vintage on the label and a longer time on the lees than standard Prosecco. Serve very cold; drink young.
