Pinot Noir

**Pinot Noir** is a red grape from Burgundy, one of the oldest and most revered varieties in the world, famous for being thin-skinned, fussy to grow and capable of extraordinary elegance. It is also known as Pinot Nero in Italy. **In the glass** — pale to medium ruby, with perfumed aromas of red cherry, raspberry, rose and, with age, forest floor and mushroom; the palate is light to medium bodied with silky tannin and vibrant acidity. **Where it grows** — Burgundy is the benchmark, but it excels in Oregon, California's Sonoma Coast, New Zealand's Central Otago and Germany, where cool climates preserve its delicacy; warmer sites give riper, fruitier wines. **At the table** — lovely with roast duck, salmon or mushroom dishes. **Cellaring** — the best bottlings age gracefully for a decade or more, though many are delicious young.
