Tasting profile

Structure: light-bodied, high acidity, dry

Prosecco divides into a vast flatland DOC and two much smaller hillside DOCGs entitled to the word Superiore: Conegliano Valdobbiadene, which is better known, and Asolo, in the hills around the walled town of Asolo north-west of Treviso. The Superiore zones demand steeper sites, lower yields and stricter rules, and the difference shows — the wines are tighter and more mineral than generic Prosecco, with a finer mousse. Made from Glera by the tank method, so the character is fresh fruit and floral lift rather than the bready complexity of bottle-fermented sparkling. Expect green apple and pear with white blossom and citrus, finishing dry and clean. Made to be drunk young; it gains nothing from keeping.
