A Chablis Premier Cru sold under a supermarket label, and rather better than that suggests: it is made by Jean-Marc Brocard, among the most respected houses in the appellation, with Pierre Brissy the winemaker on recent vintages and Odile Van Der Moere, Brocard's head winemaker, on earlier ones. The fruit is blended across several premier cru sites rather than drawn from one — past vintages have named Vau Ligneau and Vaugiraut. Chablis sits on Kimmeridgian limestone and clay studded with fossil seashells, and its cool climate and south-facing slopes are what give the wine its particular tension. Entirely unoaked at around 12.5%, so nothing stands between you and the fruit: medium gold, with citrus and white flowers on the nose, then green apple and lemon over a chalky, saline minerality, good acidity and a clean finish. Weight and richness without losing the steely edge. Serve at 10 to 12°C with oysters, shellfish or grilled fish.
