Barbaresco Pajè Riserva

Tasting profile

Structure: medium-bodied, high tannin, high acidity, dry

Pajè is one of the nine single-cru Riservas the Produttori del Barbaresco cooperative makes only in strong vintages, aged in large oak casks. The cru gives one of the most aromatic and finely built of the set: sour cherry, wild strawberry, violet and rose over a mineral, peppery frame, with high-toned acidity and fine but firm tannins. Elegance rather than weight is its signature, and it develops lovely savoury complexity over fifteen to twenty years.

Serving: Serve at 15–17 °C.
