Recioto is Valpolicella's sweet red and the older tradition from which Amarone accidentally emerged — the same appassimento drying of Corvina, Rondinella and Molinara on racks for months, but with fermentation stopped while sugar remains rather than run to dryness. Deep and rich, with dried cherry, fig and raisin over cocoa, coffee and warm spice, and the bitter-almond twist the Veneto's grapes always give. Full-bodied and sweet, yet held upright by firm acidity and real tannin, so it never cloys the way a fortified dessert wine can.
