Sant'Ulderico

Tasting profile

Structure: full-bodied, medium tannin, medium acidity, sweet

Sant'Ulderico is Monte dall'Ora's Recioto della Valpolicella Classico, a sweet red made from Corvina, Corvinone and Rondinella with a little Molinara, Croatina and Dindarella, the grapes dried in the loft for more than three months before fermentation. It is aged in Slavonian oak casks and barriques and given long bottle age before release. Expect an intense, pulpy sweet red with dried grapes, cherries in spirit and dried fruit, closing on fine spice; serve it with aged cheeses, dry pastries or dark chocolate.
