Campofiorin is the wine that invented a category. In 1964 Masi refermented a young Veronese red on the Amarone pomace, and the ripasso style grew from it. Today Masi calls its method "double fermentation": the young wine is refermented with a portion of lightly dried whole grapes, which adds concentration without the weight of Amarone. Corvina, Rondinella and Molinara give dark cherry and baked plum. The second fermentation adds raisin, cocoa and the bitter-almond twist that is the Veronese signature. It is full-bodied and warming, with rounded tannin and enough acidity to cut through fat: a supper red rather than a contemplative one.
