Tasting profile
Structure: light-bodied, medium acidity, off-dry
Asolo Prosecco Superiore DOCG comes from the hills around Asolo and the Montello in the province of Treviso. Together with Conegliano Valdobbiadene, it is one of the two hillside zones where Prosecco carries the Superiore name and the higher DOCG rank. Made from Glera, it is finer and livelier than everyday Prosecco, with a delicate mousse and aromas of green apple, pear, white peach and spring blossom. In the Extra Dry style a gentle touch of sweetness rounds out the crisp finish. That makes it a lovely aperitivo and an easy match for prosciutto, fried fish, seafood risotto or asparagus. Serve it well chilled and enjoy it young, within a year or two of the vintage, while the fruit is at its most vivid.
