Parellada

**Parellada** is a white grape from Catalonia in north-eastern Spain, best known as one of the three classic partners — alongside Macabeo and Xarel·lo — in traditional-method Cava. **In the glass** — Pale and delicate, it offers gentle green-apple, pear and white-flower aromas with a hint of citrus. On the palate it is light-bodied and fresh, with bright acidity and a soft, unassuming finish, contributing finesse and lift rather than power. **Where it grows** — It is very much a Catalan speciality, planted mainly in the Penedès, where it favours cooler, higher-altitude sites that preserve its acidity and floral perfume. It appears both in sparkling Cava and in light, easy still whites. **At the table** — Lovely as an aperitif or with light seafood, salads and fresh cheeses. **Cellaring** — Generally best enjoyed young and fresh, while its delicate aromatics and crisp acidity are at their peak.
