A certified-organic, vintage-dated Cava Reserva from the classic Catalan trio of Macabeo, Xarel-lo and Parellada, aged 18 months on its lees by the traditional method. Fresh green apple, pear and lemon lead, with a light biscuit and marzipan note from the lees ageing; the mousse is fine and the finish crisp and dry. An approachable, fruit-forward sparkling wine for aperitifs and seafood rather than the cellar.
