Cuvée Especial is Castillo Perelada's vintage Brut Nature Cava, made only in good years. Perelada's technical sheet gives the blend as Xarel·lo (about 40%), Parellada (30%), Macabeo (20%) and Chardonnay (10%), with Xarel·lo from the higher parts of Penedès and Parellada from above 600 m. It is a bone-dry, fine-beaded Cava with orchard fruit, citrus and floral notes and a toasty, almond edge from its time on the lees.
