Tasting profile
Structure: medium-bodied, high acidity, dry
A bone-dry vintage Cava from the Sumarroca family's own Penedès vineyards, built on Parellada, Xarel·lo and Macabeo with a little Chardonnay and rested around three years on its lees before disgorgement with no dosage. Expect citrus and ripe apple lifted by white flowers, then the autolytic layer of long ageing — brioche, toasted almond and a touch of spice — over a fine, persistent mousse and a lean, mineral finish. Serious enough for the table: shellfish, cured ham and fried seafood all suit its crisp, saline cut.
Serving: Serve at 6–8 °C.
