Chardonnay

**Chardonnay** is a white grape from Burgundy that has spread to nearly every wine-growing region on earth, prized for its versatility and its ability to reflect both terroir and the winemaker's hand. **In the glass** — colour ranges from pale straw to golden; unoaked versions show green apple, citrus and pear with crisp acidity, while oak-aged and malolactic styles add butter, hazelnut and a rounder, fuller body. **Where it grows** — Burgundy's Chablis and Côte de Beaune set the standard, but it shines in California, Australia, New Zealand and Italy; cool climates give lean, mineral wines while warm regions produce ripe, tropical ones. It is also a key grape in Champagne. **At the table** — pairs beautifully with roast chicken, lobster or creamy pasta. **Cellaring** — crisp styles are best young, but fine oaked and Burgundian examples can age for many years.
