Tasting profile

Structure: full-bodied, high acidity, dry

Les Baudines sits at the southern end of Chassagne-Montrachet, high on the slope where it borders Santenay — one of the leaner, more mineral premiers crus rather than the opulent ones nearer Montrachet itself. Chardonnay on limestone marl giving lemon, white peach and green apple over a firm chalky spine, hazelnut and a saline length, with oak used for texture rather than flavour. Full-bodied but taut, with the high acidity that lets white Burgundy of this class age for a decade and more.
