Le Coq is Gaspard Brochet's three-variety Extra Brut, Pinot Noir with Meunier and Chardonnay from premier cru vines at Écueil and Sacy, fermented in 228-litre barrels with regular bâtonnage, unfined and unfiltered, and given about two years on the lees. Tome marks the edition, not a vintage. Fresh orchard fruit and citrus with a light brioche note.
