Bourgeois-Diaz's BD'3C, a zero-dosage blend of Champagne's three classic grapes from the biodynamic (Demeter) estate at Crouttes-sur-Marne in the far west of the Vallée de la Marne. Fermented across steel, oak, concrete and ceramic and aged over two years on the lees. Expressive raspberry, plum and red apple with a smoky, woody touch and fine bitters on a dry finish.
