Cigalus Blanc is the white of Gérard Bertrand's organic and biodynamic Domaine de Cigalus at Hauterive in the Aude. It blends Chardonnay, Viognier and Sauvignon Blanc; about 70% is fermented in new oak and the wine then ages seven to eight months on its lees. Grapefruit, white peach and mandarin zest on the nose lead to a full, silky palate of pineapple, apricot, honey and toasted oak, with a saline finish.
