Sauvignon Blanc

**Sauvignon Blanc** is a white grape from France's Loire Valley (and a parent of Cabernet Sauvignon) prized for its zesty, aromatic character and refreshing bite. **In the glass** — pale and bright, with piercing aromas of gooseberry, green apple, freshly cut grass and citrus, sometimes edged with a flinty, mineral or even herbaceous "green" note. High acidity keeps it crisp and lively; the body is light and rarely oaked. **Where it grows** — Sancerre and Pouilly-Fumé give it a stony, mineral elegance; New Zealand's Marlborough turns it into an explosively tropical, passion-fruit-scented style. It also shines in Bordeaux (sometimes blended with Sémillon and barrel-aged), South Africa, Chile and California. **At the table** — a classic with goat cheese, oysters and fresh salads. **Cellaring** — almost always best enjoyed young and fresh, within a couple of years, though barrel-fermented Bordeaux versions can develop with time.
