Fontanafredda's vintage metodo classico from the high Alta Langa hills of southern Piedmont, roughly 70% Pinot Nero and 30% Chardonnay, aged well beyond the 30-month minimum on its lees. It shows crisp apple, white peach and citrus, with brioche and almond from the long lees ageing, a fine mousse and a fresh, chalky finish. Lovely on release, and it gains toasty depth over several years.
