Tasting profile
Structure: full-bodied, medium tannin, medium acidity, dry
Farina's Amarone della Valpolicella Classico, from Corvina, Corvinone, Rondinella and a little Molinara grown around San Pietro in Cariano, Marano and Negrar in the Classico heartland. The grapes are dried in the fruttaio for about four months, then the wine ages some two years in large 20–30 hl oak casks. Ripe and dried cherry, plum and raisin with cocoa and spice; full-bodied, warm and enveloping, with rounded tannin and enough freshness to keep it balanced. A traditional, large-cask style rather than a new-oak one.
