Tasting profile
Structure: full-bodied, medium tannin, medium acidity, dry
Ca' del Laito is Tommaso Bussola's Valpolicella Ripasso Classico Superiore, from estate vineyards in the Classico zone, by a grower often mentioned alongside Quintarelli and Dal Forno. After the year's Amarone is racked into barrel, the Valpolicella is put through a second fermentation of around fifteen days on the Amarone pomace, then aged about two years in a mix of used tonneaux, barriques and large botti. Corvina and Corvinone lead, with Rondinella and a little Molinara, and the wine comes in at around 15.5%. Full, fruity and long, with spicy dried cherries and red berries, plum, raisin and cocoa: James Suckling called it the real deal for ripasso, with an Amarone feel. Ready on release and rewarding several years of cellaring.
