Tasting profile
Structure: full-bodied, medium tannin, medium acidity, dry
Ripasso is a technique rather than a place: after Amarone is drawn off, the finished Valpolicella is pumped over the still-warm dried grape skins left behind and refermented on them. The wine picks up colour, alcohol, glycerol and a portion of Amarone's raisined depth — hence its nickname, baby Amarone. Made from Corvina, Corvinone and Rondinella; Classico means the historic heartland north-west of Verona, Superiore a higher minimum alcohol and ageing. Expect black cherry and dried fig with cocoa, sweet spice and a faintly bitter almond finish, full-bodied with soft ripe tannins. Richer and rounder than plain Valpolicella by a wide margin, without Amarone's weight or price.
