Tasting profile
Structure: medium-bodied, low tannin, high acidity, dry
Bollinger's non-vintage, and a house that does several things most do not: a high proportion of Pinot Noir, fermentation of the reserve wines in old oak barrels rather than steel, and reserve wines kept under cork in magnum. The result is Champagne with real weight and vinosity — baked apple, quince and pear over brioche, toasted hazelnut and a faintly spicy, savoury depth, on a fine mousse and firm acidity. Medium-bodied and structured rather than aperitif-light. It rewards a proper wine glass and food, and it holds well for years beyond purchase.
Serving: Serve at 6–8 °C.
