Bollinger's vintage Champagne, made only in years the house judges worthy. It is Pinot Noir-led with Chardonnay, fermented entirely in old oak barrels, and aged for years on the lees under cork before disgorgement. Everything that marks the Special Cuvée is dialled up here. Baked apple and quince meet brioche, toasted hazelnut, honey and a smoky, savoury depth, carried on a fine, persistent mousse and firm acidity. It is full-bodied and genuinely vinous, closer to a great white Burgundy with bubbles than to an aperitif, and it ages superbly for decades.
