There are serious reds too, and a small amount of white; the coastal appellation of Bandol is prized for structured, age-worthy Mourvèdre-based reds, while Cassis is known for its whites. **Character** — The classic Provençal rosé is very pale, almost onion-skin pink, with crisp acidity and gentle notes of red berry, citrus and herbs. A warm, dry climate and cooling sea breezes shape the freshness. **Good to know** — Côtes de Provence is the largest appellation, and the region has done more than any other to make dry rosé a fashionable, year-round drink.
