Domaine Ray-Jane at Le Plan du Castellet is one of Bandol's most stubbornly traditional estates, with a very high proportion of Mourvèdre and long ageing in old foudre — the appellation requires eighteen months in wood, and this house takes its time beyond that. Mourvèdre is the whole point: it gives blackberry fruit wrapped in leather, game and warm garrigue herbs, with dense, chewy tannins and a savoury, almost meaty finish that few other varieties produce. Sturdy, rustic in the good sense, and forbidding when young. It needs food, air and years.
