Tasting profile
Structure: medium-bodied, low tannin, medium acidity, dry
Clos Sainte Magdeleine's vineyards tumble down the Cap Canaille cliffs to the Mediterranean at Cassis, farmed organically on limestone right above the sea. The Cassis Blanc is led by Marsanne (around 40–45%) with Ugni Blanc, Clairette and a little Bourboulenc. Textured yet fresh: white peach and lemon with fennel, honeysuckle and almond, and a saline, sea-spray finish. The classic partner for bouillabaisse.
Serving: Serve at 9–11 °C.
