Tommasi's Ripasso is Valpolicella Classico refermented on the drained skins of the house's Amarone, which is where the "repassed" name comes from and what gives it extra weight, alcohol and depth. Dark cherry and dried plum with cocoa, sweet spice and a raisined edge inherited from those skins, fuller and rounder than straight Valpolicella but without Amarone's intensity or price. The bitter-almond twist on the finish is Corvina, Corvinone and Rondinella still showing through. Often called baby Amarone, and the nickname is fair.
