Marco de Grazia founded Terre Nere in 2001 on the conviction that Etna's fragmented old-vine parcels were the equivalent of Burgundy's crus — his 2002 Guardiola was the first contrada-specific wine ever made on the volcano, a decade before the contrade were formally recognised. Calderara Sottana is his flagship, and this is its white: 100% Carricante from Randazzo on Etna's north slope at 600 to 650 metres, on extremely stony, shallow volcanic soil thick with black pumice and sand, from vines of fifteen to thirty years. Around 6,000 bottles, fermented and aged in ten-hectolitre casks. The estate calls this contrada a tenor against the soprano of its Santo Spirito — deeper and more structured. Crushed hazelnut and almond over yellow flowers, dried apricot and pomelo, then salty volcanic minerals, mountain herbs and a chiselled line of acidity through a long finish. Powerful and smoky, and among Italy's finest whites. Serve at 10 to 12°C.
