Carricante

**Carricante** is a white grape native to the volcanic slopes of Mount Etna in Sicily, and the backbone of the region's crisp, age-worthy whites. **In the glass** — It is bracing and mineral, with green apple, citrus, white flowers and a smoky, flinty character drawn from the volcanic soils; high acidity, a lean-to-medium body and a saline, sometimes almost anise-tinged finish define it. **Where it grows** — Etna is its home, where old vines on high, ash-rich terraces give the finest Etna Bianco, often at considerable altitude. It is grown almost entirely in eastern Sicily. **At the table** — Excellent with shellfish, grilled fish and lighter poultry. **Cellaring** — Unusually for a white, the best examples reward patience, gaining honeyed, nutty complexity with several years in bottle.
