Tasting profile

Structure: medium-bodied, low tannin, high acidity, dry

La Montre (the watch) is Paul Gosset's second perpetual reserve, kept in bottle under low pressure and refreshed with each new harvest, aiming for twelve years of wines in the blend, like the twelve hours on a watch face. About 75% Pinot Noir with Chardonnay and a little Meunier from Aÿ, Mareuil-sur-Aÿ, Dizy and Chouilly, 70% vinified in oak and dosed at about 3 g/l. Deep and layered, with baked apple, quince, brioche, toasted nuts and honey, held taut by chalky acidity.
