Prémices is the entry cuvée of Pierric Brochet's Champagne Jules Brochet at Taissy: Chardonnay from Taissy, Pinot Noir from Mailly and Meunier from Barzy-sur-Marne, a base year blended with about 20% perpetual reserve, fermented with native yeasts, partly in barrel, and bottled unfined and unfiltered with very low dosage. Golden apple, quince and almond with citrus pith over a taut, chalky line.
