Macvin du Jura — a mistelle rather than a wine in the ordinary sense: unfermented grape must blended with marc du Jura, the region's own pomace brandy, then aged in barrel. The spirit prevents fermentation entirely, so the sugar is the grape's own. Domaine de la Tournelle work biodynamically at Arbois. Quince, dried apricot and honey over walnut, orange peel and the marc's warm, earthy grip — sweet, rich and distinctly Jurassien.
