Tasting profile

Structure: full-bodied, low tannin, high acidity, dry

Arbois Vin Jaune from Domaine de la Tournelle, Pascal and Évelyne Clairet's natural-leaning Arbois estate. Savagnin aged at least six years and three months under a veil of yeast without topping up, then bottled in the 62 cl clavelin. The flor gives the signature walnut, curry spice and dried apple with almond, mushroom and a saline, piercing finish. Among the world's longest-lived dry whites; decant and serve at cellar temperature.
