Savagnin

**Savagnin** is a white grape from the Jura region of eastern France, best known as the grape behind the region's remarkable oxidative wines. **In the glass** — in its dramatic *vin jaune* form, aged for years under a veil of yeast, it develops intense curry, walnut, dried apple and bruised-fruit aromas with a bone-dry, almost sherry-like intensity. Made in a more conventional, protected style it is fresher and more floral, with firm acidity. **Where it grows** — the Jura is its heartland, where it stars in Château-Chalon and other vin jaune appellations. It is genetically linked to the wider Traminer family and appears under various names across Central Europe and increasingly among niche growers elsewhere. **At the table** — vin jaune is a classic with Comté cheese and chicken in cream sauce. **Cellaring** — vin jaune is famously long-lived, keeping for decades; fresher styles are best drunk younger.
