Poulsard

**Poulsard** is a red grape from the Jura in eastern France, a regional specialty famous for producing wines so pale they can look almost like rosés. **In the glass** — It is thin-skinned and low in pigment, giving delicate, translucent reds with high-toned red-fruit and floral aromas, bright acidity and very light tannins; charming and ethereal rather than robust. **Where it grows** — It is grown almost entirely in the Jura, where it is a signature of the region's light reds and often blended with Trousseau and Pinot Noir. Its low colour and fragility make it a niche, characterful variety unlikely to spread far beyond home. **At the table** — Serve lightly chilled with poultry, charcuterie or mushroom dishes. **Cellaring** — Approachable young, though good examples can develop intriguing complexity with a few years in bottle.
