Tasting profile

Structure: medium-bodied, low tannin, high acidity, dry

Fleur de Savagnin is the topped-up (ouillé), non-oxidative Savagnin of Evelyne and Pascal Clairet's Domaine de la Tournelle in Arbois, from organically and biodynamically farmed vines on grey marl. Hand-harvested, fermented with native yeasts in tank and old barrels and aged about 18 months on its lees, without added sulphur until bottling. Linear and energetic, with lemon, green apple and white flowers, a hint of exotic spice and walnut, and a saline finish.
