Tasting profile

Structure: full-bodied, high tannin, medium acidity, dry

Don Melchor is Chile's benchmark Cabernet, first made in 1987 from the Don Melchor vineyard in Puente Alto, on the alluvial terraces of the upper Maipo at the foot of the Andes; Concha y Toro now runs it as its own winery. Around 90% Cabernet Sauvignon with small amounts of Cabernet Franc, Merlot and Petit Verdot, aged about 15 months in French oak. Blackcurrant and black cherry with graphite, cedar, a minty freshness and dark chocolate; full-bodied with fine-grained, firm tannin and a long, polished finish.
