Cabernet Sauvignon

**Cabernet Sauvignon** is a red grape born in Bordeaux from a natural crossing of Cabernet Franc and Sauvignon Blanc, and it has become the most planted premium red variety on the planet, the backbone of countless age-worthy wines. **In the glass** — expect a deep, almost opaque ruby colour, aromas of blackcurrant, cassis, cedar and graphite, and a firm, structured palate driven by high tannin, bright acidity and full body. **Where it grows** — it is the anchor of the Médoc in Bordeaux, thrives in Napa Valley and Coonawarra, and produces bold, ripe styles in Chile, Argentina and South Africa; cooler sites lean herbal and savoury while warmer ones give riper, plusher fruit. **At the table** — a natural match for a grilled ribeye or roast lamb. **Cellaring** — its tannin and acidity make it a superb ager, and top examples reward a decade or more in the bottle.
