Maipo is Chile's classic Cabernet valley, sitting in the shadow of the Andes just south of Santiago, and its wines carry a recognisable signature: blackcurrant fruit with a green peppercorn and eucalyptus-mint lift that comes from the cool night air draining off the mountains. This is the varietal Cabernet from Viña Indómita, medium-bodied and cleanly made, with modest oak showing as vanilla and a graphite edge on the finish. An everyday Cabernet built for drinking rather than cellaring.
