Hilltops lies inland in southern New South Wales at around 450 metres, cool enough to keep Cabernet fine-boned and herbal where warmer regions give breadth. Cassis and dark plum with cedar, graphite, violet and a leafy Cabernet lift. Medium-full with firm, fine tannin and fresh acidity. Structure over fruit weight.
