Hilltops lies north-west of the Canberra District and sits a touch warmer, which gives Shiraz more flesh and darker fruit than the home vineyards produce. Dark plum and blackberry with cracked black pepper, dark chocolate and a savoury, dried-herb edge. Fuller-bodied than the estate's cooler bottlings but still built on freshness rather than weight, with supple tannin and a long finish. Straightforwardly generous and very good with food.
