Escalier is Moppity's flagship Shiraz, made only in seasons that warrant it from the estate's best Hilltops parcels. Hilltops lies inland in southern New South Wales at around 450 metres, high enough that Shiraz keeps a peppery, savoury frame rather than tipping into sheer ripeness. Dark plum and blackberry with cracked black pepper, dried herb, violet and cedary oak. Medium-full with fine, firm tannin and a long savoury finish. Structured rather than plush, and built to reward a few years.
