Tasting profile

Structure: medium-bodied, low tannin, high acidity, dry

Pieropan's single-vineyard Soave Classico, first made in 1978 from the La Rocca slope beneath Soave's castle. Unusually for Soave the site is limestone, not volcanic basalt. It is 100% Garganega, certified organic, and spends about 15 months on its lees in large French and Slavonian oak with regular stirring. Expect pear, orchard fruit and citrus zest with almond, stem ginger and a creamy texture, held together by vibrant acidity and a crushed-rock finish. It is one of Italy's most age-worthy whites and gains honeyed, nutty depth over a decade.
