Gerardo Cesari was founded at Fumane in the Valpolicella in 1936 and is best known for Amarone, but the Centofilari line is a different proposition entirely — whites from the southern shore of Lake Garda, named for the vineyard they come from. The lake acts as a vast thermal regulator, moderating winters and evening out the temperature swings, while glacial retreat left a dense calcareous clay unusually rich in mineral salts, which is generally credited with the saline backbone of Garda whites. This is Garganega, the Soave grape, with a touch of Chardonnay for body, fermented cool in steel and left two months on the lees. Expect tropical fruit and citrus with white flowers, defined acidity and a distinct savoury sapidity through the finish.
