Tasting profile
Structure: medium-bodied, low tannin, high acidity, dry
A single-parcel Blanc de Blancs from Les Gras d'Huile at Beaunay, Chardonnay planted between 1993 and 2004 in a vineyard Maxime Oudiette farms for biodiversity. Each release is built mostly on one harvest, completed with about a fifth of perpetual reserve, fermented and aged in 228-litre barrels and finished Extra Brut with very little dosage. Lemon, green apple and white flowers over a chalky, saline core, with a light brioche richness from the barrels and long lees ageing.
