Tasting profile

Structure: light-bodied, medium tannin, high acidity, dry

A still red Coteaux Champenois from Maxime Oudiette's family vineyards at Beaunay, in the Petit Morin hills behind the Côte des Blancs: Pinot Noir from the single parcel Les Hautes Sources Souris, made in tiny quantities. Fine and reserved rather than generous, with redcurrant, sour cherry and raspberry, a forest-floor and chalky edge, bright acidity and present but fine tannins that give it length.
