Tasting profile

Structure: medium-bodied, high acidity, dry

A topped-up (ouillé), non-oxidative Chardonnay from the lower slopes of Nicolas Jacob's original 1983 parcel at L'Étoile in the southern Jura, grown on marl. Organic, fermented with native yeasts in old barrels and bottled without fining or filtration, now labelled Vin de France. Taut and mineral, with citrus pith, green apple and a saline, chalky finish; a little nuttiness builds with time in bottle.
