Tasting profile

Structure: medium-bodied, high acidity, dry

Louis Jadot's Bourgogne Chardonnay is the house's regional white, blended from vineyards across the Côte d'Or, the Côte Chalonnaise and the Mâconnais, and it is one of the reference points for what plain white Burgundy should taste like. Jadot's style is not the leanest: a portion of barrel ageing and full malolactic give it a rounder, faintly buttery edge over green apple and lemon fruit, with a hazelnut note and a dry, chalky finish. Medium-bodied and unshowy, made to be drunk rather than kept, and reliable across vintages in a way single-vineyard wines are not. Serve at 11-12°C; too cold and the texture that distinguishes it disappears.
